Lemon balm also known as citronella arrived in the French pharmacopoeia towards the end of the Middle Ages. At that time, it was used as the basis for many elixirs and liquors produced by monasteries. It is in the XVIIth century that the plant knows a success in France with the famous "water of lemon balm of the Carmelites" made by the monks.

Directions:
In infusion: pour the plant into simmering hot water and let infuse 3 to 5 minutes, according to your tastes, to fully release the flavors and benefits of the plant. In decoction: immerse the plant in water and bring everything to a boil for 10 to 20 minutes, then let infuse 10 to 15 minutes off the heat before filtering. In maceration: pour the plant in cold water for several hours then filter. Storage advice: Close the case well after each use. To be consumed as part of a varied and balanced diet and a healthy lifestyle. Keep out of the reach of children.
